- For Bruschetta
- Baguette
- Goat Cheese
- Bruschetta Sauce (from Trader Joes if possible)
- For Homemade Caesar Salad (or buy one!)
- 1 Garlic CLove
- 2 large Egg Yokes
- 2 tbsps Fresh Lemon Juice
- 1 tsp Dijon Mustard
- 2 tbsps Olive Oil
- 3 tbsps Grated Parkesarn
- Kosher Salt
- Freshly Ground Black Pepper
- For Journeyman Marinated Wagyu Tri Tip
- Purchase pre-marinated Wagyu tri tip at Journeyman Local Healdsburg Meat Company in Healdsburg; if not local-use favorite local meat shop and purchase marinated tri tip
1st Course - Bruschetta – paired with Gary Farrell 2016 Westside Farms Chardonnay
Ingredients:
Baguette
Goat Cheese
Bruschetta Sauce – preferably from Trader Joe’s in the refrigerated section by hummus; if you don’t have Trader Joe’s, recommend making a fresh bruschetta mixture
Balsamic Glaze – preferably from Trader Joe’s by olive oil
Directions:
Slice baguette into pieces of desired thickness
Place in single layer on baking dish and broil on low in oven for 2.5 minutes or until lightly toasted – watch closely as it toasts quickly
Let cool slightly, then spread goat cheese on each piece
Spoon about a tablespoon of bruschetta sauce on top of goat cheese
Drizzle with balsamic glaze
Enjoy with Gary Farrell 2016 Westside Farms Chardonnay
2nd Course - Caesar Salad – paired with Gary Farrell 2016 McDonald Mountain Pinot Noir
Homemade Caesar Salad
Ingredients:
Can of anchovy fillets packed in oil
1 garlic clove
2 large egg yolks
2 tablespoons fresh lemon juice – may add a little extra at end depending on taste
1 teaspoon Dijon mustard
2 tablespoons olive oil
3 tablespoons grated Parmesan –shredded or chunks are fine if using food processor
Kosher salt
Freshly ground black pepper
Directions:
Put anchovy filets, garlic clove, and pinch of salt in food processor. Process until a paste.
Add 2 egg yolks, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard and process until combined.
Slowly add a little olive oil at a time and process, then add more and process. Adding slowly and processing smaller amounts each time helps thicken the dressing.
Add parmesan cheese, salt and pepper to taste and process.
Taste and see if you would like to add any additional lemon juice, cheese, Dijon mustard, salt or pepper.
Put in the fridge to chill. Can be made a day ahead.
Mix with Romaine Lettuce and top with parmesan cheese
3rd Course - Journeyman Marinated Wagyu Tri Tip – paired with Gary Farrell 2016 McDonald Mountain Pinot Noir
Journeyman Marinated Wagyu Tri Tip
Purchase pre-marinated Wagyu tri tip at Journeyman Local Healdsburg Meat Company in Healdsburg; if not local-use favorite local meat shop and purchase marinated tri tip
Grill for 10-15 minutes on each side depending on desired finish (less for rare more for medium)
Let meat set for 10 minutes prior to slicing
